Shares A Romantic Recipe With You

For the Lentils

  • ½ cup beluga black lentils
  • 1 medium sized shallot, minced
  • 1 oz canola oil
  • 1  bay leaf
  • 2 cups water or vegetable stock
  • Kosher Salt

In a small pot sweat the shallots in oil until soft and fragrant, add the lentils, water, salt and bring to a slow simmer. Continue to cook slowly until lentils are tender, about 12-15 minutes.

Drain excess liquid, reserve


For the Carrots

  • 8-10 Rainbow heirloom baby carrots, peeled
  • Water
  • 1/2lb Unsalted butter
  • Kosher salt

Place carrots in a shallow pan, add enough water to barely cover, add butter and salt. Bring to a boil, reduce to a slow simmer and cook until carrots are just cooked, about 5-7 minutes. Remove from heat and let cool in the liquid, reserve.


For the Cabbage

  • 1 head Savoy Cabbage, 4 large leaves removed and washed
  • Water
  • Kosher Salt
  • 2oz unsalted Butter

In a medium pot bring salted water to a rolling boil. Plunge the cabbage leaves in and blanch for 2 minutes, remove cabbage leaves and place onto a plate to cool.


For the Cider Broth

  • 2 cups apple cider

Reduce cider slowly by 2/3


For the Salmon

  • 2 pieces, 6 ounce skin off portioned Atlantic salmon filets
  • Kosher Salt
  • Ground Black pepper
  • 1 oz Canola Oil

Preheat oven to 375 degrees Fahrenheit. In a sauté pan heat oil until almost smoking over high heat. Season the salmon filets well and place top side down into pan and turn heat to medium. Sear salmon until a nice golden crust forms, about 2-3 minutes, flip over and place fish and pan into oven. Roast for about 5 minutes for medium to medium well. 

To assemble the dish:

  • Warm the cabbage leaves with butter until hot, season and place in center of a large bowl.
  • Heat the lentils thoroughly and place a mound on top of the cabbage
  • Re-heat the carrots in the braising liquid and arrange 4 on each plate around the cabbage and lentils
  • Place the Salmon directly on top of the lentils in the center.
  • Pour the hot cider broth in the bowl finish
